Sunday Pot Roast
It’s a classic. The house fills with wonderful aromas; and for some of us of a “certain age,” those aromas call up happy memories of family dinners, laughter, and good times.
This pot roast recipe is adapted from one in a recent Southern Living issue. The little bit of fiddling at the beginning pays off big in flavor with the rich, savory flavors at the end. Use the vegetables, or not, according to your preference. But I promise you that the carrots are a treat!
Make it a weekend feast—maybe plan a family game night. Or keep the group small and use the leftovers for super quick meals during the week, such as hot roast beef sandwiches, stroganoff, carne guisada tacos, or cottage pie.
